Coda di Volpe Sannio 2023 D.O.C

A stunning White Wine formed within the strict DOC guidelines. Derived from the Coda di Volpe grape, harvested in the second half of the September. The Coda di Volpe is a precious grape native to Benevento, it has a straw colour and characteristic floral aromas. The flavour is dry, balanced and fresh. This wine goes well with appetizers and first courses of fish, pasta, white meats, mozzarella and grilled vegetables. Ideally served at a temperature range of 8-10°C.

DESCRIPTION

Coda di Volpe Sannio D.O.C 13.5% 2022 (White) Farming of the grapes: The wine is made from the Coda di Volpe grape, grown in limestone-clay soils at an altitude of 150-350 m.a.s.l. Located on the slopes of the Regional Park of Taburno-Camposauro. An espalier farming system is employed giving a yield of 110 hectares from vines with an average age of between 5-15 years. The harvest takes place in the second half of September. Vinification: The grapes are harvested by hand and conferred to the winery. There follows the de-stemming and soft pressing, using the technique of cryo-maceration, the fermentation takes place in stainless steel tanks for about 15 days at a controlled temperature. The wine is bottled during the month of March.
