Borgo Molino Serna Rosso 932 2018 I.G.P. 15% (Red) Training System: Guyot Harvest Time: End of September, beginning of October.
Vinification: The grapes are selected and harvested by hand. Part of the Refosco grapes are harvested in trays and left to dry for about two months in well-ventilated lofts. Consequently, takes place the de-stemming (separation of the grapes from the stalks).
The skins remain in contact with the must to favour the evolution of the colouring substance and the extraction of tannins, all at temperatures between 26°-28 ° for
14-16 days of maceration, then separated. The de-stemming takes place for Merlot and Cabernet Sauvignon too. They receive the same process of extraction and maceration as Refosco. Subsequently, the step of ageing and maturation takes place in
French oak barrels (500 Lt. Tonneau) for about 24 months. It is then aged for 4 months in the bottle before release.
