“Telesinum” Barbera 2021 D.O.C 13.5% (Red) Story behind Telesinum: The Camaiola, in ancient times, was cultivated in the fertile plain of the territory of Telesia. It is precisely in this Roman city of Samnite origin, located in the heart of the Telesina Valley, that the "Telesinum" wine was produced. The "Telesinum" represents the deep bond between the territory, its wines and its history. The difference between our other Barbera is that Telesinum is made with indigenous yeasts that are contained in the skin of the grape while Barbera is not. Farming of grapes: This wine is obtained from the Barbera grape, grown in limestone-clay soils at an altitude of 150- 350 m.a.s.l. Located on the slopes of the Regional Park of Taburno-Camposauro. An espalier farming system is employed giving a yield of 80 hectares from vines with an average age ranging from between 10 to 25 years. The harvest takes place during the month of October. Vinification: The grapes are harvested by hand and conferred to the winery. There follows the de-stemming and soft pressing. The vinification is carried out by maceration with the skins, which are continuously re-submerged into the must. The fermentation takes place in stainless steel tanks at a controlled temperature. The wine is then aged in large oak casks for at least 18 months. The ageing process then continues in the bottle.
