Continental weather. Cold winter and extremely hot and dry summer with important differences in temperature between day and night.
The harvest takes place during the nights of the first week of September. The maceration is carried out at a low temperature for 8 to 12 hours. After pneumatic pressing, alcoholic fermentation takes place at low temperatures in stainless steel tanks. The wine remains on its lees until clarification; after that cold stabilization treatment and careful filtration is performed.
