Vinification: The whole grapes are subject to soft pressing and the must is then fermented at a controlled temperature of 25°C. Two weeks of maceration takes place. The wine is then aged for 12 months in oak barrels (Treuil and Toneleria) followed by a further 12 months in the bottle.
