An extraordinary award-winning red wine coming from the hills of Troia, Puglia. The wine has a ruby red colour with intense garnet reflections at the rim. On the nose, it’s intense and complex. Jammy with clear vanilla spiced scents, black pepper and balsamic notes at the finish. The Taste is dry, warm, soft, tannic, persistent and rounded off with toasty notes. Ideal food pairings: Game, roasted and braised meat and mature cheeses. Ideally served at a temperature of 16-18°C.


N.B. We do recommend decanting this wine prior to consumption for around 1 to 2 hours. This is incredibly beneficial to the wine. This wine is unfiltered, so you may find sediment in your wine but please do not worry at all. There is nothing wrong with your wine! No matter the amount of sediment, it is a completely natural occurrence in red and white wine and can actually be a sign that you’ve gotten yourself a high-quality bottle! After many months or years in the bottle, a fine sediment accumulation of lees forms at the bottom of the liquid and can stand as evidence of a great, well-aged red wine. The best winemakers know that, oftentimes, less is more when it comes to intervening with methods like filtering. When wines are filtered, it not only gets rid of the sediment but it also strips the wine of quality features such as mouthfeel and even palate flavour expression. So, trust us when we say it’s totally natural and if you see wine sediment settle to the bottom of your glass, rejoice! You could be in for a real treat.

Farming of grapes: 

Vine age: 15 years

Training system: Guyot espalier

Planting density: 4000 plants per hectare

Yield: 60 quintals (6000 kg)


Territory: Troia (FG), Puglia (Organic Farming Methods)

Altitude: 439 metres above sea-level

Soil: Chalky, medium texture

Harvest period: First 10 days of October


Vinification: The whole grapes are subject to soft pressing and the must is then fermented at a controlled temperature of 25°C. Two weeks of maceration takes place. The wine is then aged for 12 months in oak barrels (Treuil and Toneleria) followed by a further 12 months in the bottle.
