Continental weather. Cold winter and extremely hot and dry summer with important differences in temperature between day and night.
The harvest takes place at the beginning of October. Macerated in skins for 12 hours at low temperatures. After bleeding the vat, the resultant must is fermented at a controlled temperature of 16-18°C for 12 days. The wine remains in vats of stainless steel until next January.
