Aglianico Beneventano IGP Frizzante 12%
Farming of the grapes: Obtained from the Aglianico grape, grown in calcareous-clay soils at an altitude between 200 and 350 m.a.s.l. Located on the slopes of the Regional Park of Taburno-Camposauro, the breeding system is espalier with a yield of 120 hectares and an average vine age of 20 years. The harvest takes place in September.
Vinification: The grapes are harvested by hand slightly before ripeness and transferred to the winery in boxes. There follows the soft pressing of the whole grape. The fermentation begins in stainless steel tanks for about 15-20 days in the cold and refinement on the fine lees. The base wine obtained is refermented in an autoclave according to the Martinotti method, where it is refined for about 3 months.
