Maria Cristina Falanghina Vino Spumante Brut 12% Farming of the grapes: Obtained from the Falanghina grape, grown in calcareous-clay soils at an altitude between 150 and 350 m.a.s.l. Located on the slopes of the Regional Park of Taburno-Camposauro, the breeding system is espalier with a yield of 90 hectares and an average vine age of 5-15 years. The harvest takes place from the middle of August, using selected vineyards. Vinification: The grapes are harvested by hand and transferred to the winery in boxes. There follows the soft pressing of the whole grape. The fermentation takes place in stainless steel tanks for about 15-20 days in cold refinement on fine lees. The base wine obtained is refermented in an autoclave according to the Martinotti method, where it is refined over 3 months.
