A stunning award-winning 100% Organic Rosé Spumante Extra Dry Wine which has a pale pink colour, fine and persistent perlage. The nose is intense with the smell of violet, wild strawberry and currant. On the palate, it has good acidity with a crisp and refreshing finish, along with good flavour and pleasantly soft. This sparkling wine goes well with all appetizers such as fish, white meat starters and first courses. Also, sushi, seafood, parma ham or San Daniele make excellent pairings. Ideally served at a temperature range of 8-10°C.

M Organic Rosé Spumante Extra Dry

Farming of grapes: This wine is obtained from the Montepulciano grape, grown in the old vineyards selected in the municipalities of Orsogna, Filleto and Guardiagrele. They are small towns in the province of Chieti in the Abruzzo region of Italy. The soils are made up of textured lands and generally end with a limestone substrate and rocky outcrops sparse. The thermal values characterize a rather warm texture, with little annual rainfall and very high-temperature ranges; ideal conditions that have a positive influence on the quality of the grapes. A pergola Abruzzese training system is employed giving a yield of 1800 plants per hectare. The harvest takes place during the middle of September.

Vinification: Done in white, the grapes are softly pressed. After cleaning the must,  the fermentation continues at a controlled temperature of  16°C. The second fermentation and foaming take place in an autoclave at a temperature of 15 and 16°C.

Refinement: The wine is then decanted and placed to refine for a few months in steel barrels. The sparkling base is then processed in the autoclaves where fermentation takes place.
