Farming of the grapes: The wine is obtained from the Aglianico grape, grown in limestone-clay soils at an altitude of 200-350 m.a.s.l. Located on the slopes of the Regional Park of Taburno-Camposauro. An espalier farming system is employed giving a yield of 80 hectares from vines with an average age of 20 years. The harvest takes place during the month of September.
Vinification: The grapes are harvested slightly earlier before ripening, cooled on arrival at the winery, pressed in order to facilitate the cryo-maceration and then soft pressed. Resolving in the extraction of a more noble substance that will bring the freshness and perfumes to the future wine. The fermentation is at a low temperature with subsequent ageing in the cellar allowing it to form wine excellence.
